A new high-end grocery store, Sabayons, is opening in the void left in The Bay Centre by The Bay itself.
Sabayons is an offshoot of the incredibly popular and eclectic Market Garden boutique grocer, located in Vic West.
Market Garden is best known for their selection of local, artisanal and imported products.
According to an individual who has seen the inside the Sabayons space over the weekend, the new downtown grocer is currently stocking shelves and getting ready for a grand opening, which could be coming any day now.
“There was staff busy filling the shelves so I guess they will open soon,” said the individual.
They added that the new Sabayons space has kept the old rugs that donned The Bay’s floors prior to closing.
The name Sabayons reportedly comes from combining the names of former stores at the location of The Bay Centre: The Bay and the Saba building, which was torn down in 1987.

In addition to Sabayons moving into the former Bay location, the Downtown YMCA-YWCA is set to open in the space as well, in early 2026.
The Downtown YMCA-YWCA space will offer fitness facilities but no pool/gymnasium.
