When the news was announced that the Victoria Public Market had to evict all its makers and artisans, the future was unclear for many of the impacted businesses.
Despite this struggle, one business whose legacy will live on is Victoria Pie Company; however, the future of this business will be marked by a new name—Indigo Bakes.
Victoria Wan is a local baker who used to work for Victoria Pie Company before the Public Market closed in March.
Recently, Wan started her own business, dubbed Indigo Bakes, and has been given the blessing to keep the legacy of Victoria Pie Company alive.
“Locals were saddened this past year with the closure of the Victoria Public Market,” wrote Wan.
“Its sale to Loblaws led several beloved businesses to close, including the decade-old fixture, Victoria Pie Company.”
She is responsible for some of Victoria Pie Company’s most popular items, including the cheesecake and her chocolate hazelnut cookies.
Under the new moniker of Indigo Bakes, Wan will keep making their renowned pies, such as the chicken pot pie, mushroom gruyere and apple pie, as well as adding some of her own new additions.
Wan told Victoria Buzz that she hopes that the love and support for Victoria Pie Company will eventually lead to her being able to sell the pies in a brick-and-mortar location again.
Wan is still selling the pies with their Victoria Pie Company logo for the time being, and they are available in the frozen section in Langford’s HOB Fine Foods, the Market Garden and Kid Sister Ice Cream in Esquimalt and lastly, they will be sold once more in Peppers Foods in Cadboro Bay.
